Join Giancarlo as he teaches you a range of recipes from the Caldesi’s latest book on regional Italian cookery.
On this course Giancarlo will be sharing with you the dishes of his ‘childhood’, dishes that carry a special place in his heart. Hearty dishes from an agriculturally rich area of Italy which provides a larder stuffed full of beautiful produce. Dishes that have depth of flavour and are often greater than the sum of their parts. 
Specially selected regional wines will be served with lunch, while you will be able to hear some of the stories of the writing of the book and the history behind the dishes you prepared.
Sample Dishes:-
  • Crostini with mozzarella and Porcini mushrooms
  • Cibreo - Choux pastry with chicken livers, cream and lemon
  • Tortelli al Mugello con sugo di ‘nana’ - Ravioli stuffed with potato and cheese
  • Calamari in zimino - Slow cooked calamari with tomato, garlic and chilli
  • Cinghiale in salmì - Wild boar stew
  • Cannellini alla Giancarlo - Giancarlo’s cannellini beans
  • Verdure al cartoccio - Vegetables steamed in paper
  • Crema di Marietta - Marietta’s pannacotta
  • Ricciarelli - Sienese almond biscuits
