If you are on a meat-free diet, or simply just want to learn and experiment some new ways to use vegetables in your cooking, this is just the right course for you as it is packed with wonderful seasonal recipes which give inspiration for either a quick supper or a 3 course dinner party. Katie will show you ways to incorporate more roots, vegetables, pulses and brassicas into your meals over the spring season.

  • Sicilian Tomato and Rice Soup with green breadcrumbs
  • Pasta with aubergines and tomatoes
  • Pugliese Leek and raisin calzone
  • Venetian Peperonata
  • Torta caprese – chocolate and almond cake from Amalfi
