Create some plant-based perfection on this course that explores Italian vegetarian cookery. Using the best, unprocessed, seasonal ingredients, you'll create vibrant, flavourful dishes that will be loved by vegetarians and non-vegetarians alike. Colourful, healthy, packed with flavour, the dishes you learn on this course will prove that a plant-based diet is not only good for you but is not at all restricted by not having meat or fish as a protein source.

  • Aubergine Palermitana – Breaded aubergines with sweet/sour sauce
  • Courgette and tomato ragu
  • Leek and spring onion Pugliese pie made with olive oil and wine pastry
  • Tuscan contadini salad
  • Charred onion petals filled with herb cream and almond crumb
  • Chickpea and carrot patties with roast garlic aquafaba aioli
