Enjoy a refreshingly interesting journey into vegetable butchery and meat-free menus on this course designed to elevate the best of seasonal veg to new levels of taste intensity. Katie will show you ideas-a-plenty for incorporating more roots, mushrooms, pulses and brassicas into your meals over the winter season.

  • Tiziana’s stuffed aubergines
  • Kale and ricotta gnocchi with butter and sage sauce
  • Tuscan Ribollita soup
  • Sformato of carrot, celeriac and spinach with Pecorino sauce
  • Porcini and walnut loaf with a tomato crust and red wine and caramelised onion sauce
  • Tuscan lentils with soffritto
  • Lucchese Swiss chard, cinnamon and pinenut tart
