After Katie & Giancarlo Caldesi's many trips to Rome researching dishes for their  cookery book 'Rome – Centuries in an Italian kitchen' we are delighted to share some of the stand-out recipes from the book.
Together with Head Chef Stefano you’ll recreate a feast of Roman proportions.  You’ll also learn the history and traditons behind the dishes as you cook them.
At the end of the course you will sit down and enjoy all the dishes you have created, accompanied by carefully and specially selected regional wines.  It will be an unforgettable gastronomic walk through history!

  • Suppli – hot rice fritters with a melting mozzarella centre
  • Lagana – ancient Roman Flatbreads made with wine
  • Hot fish pickle
  • Roman carbonara
  • Pollo alla Cacciatora - Chicken with Rosemary and Vinegar
  • Spinaci saltati con Pinoli e Uvetta Sultanina - Sautéed Spinach with Pine Nuts and Raisins
  • Patate Arrostite della Nonna - Nonna’s Potatoes
  • Whipped ricotta with rum and fresh seasonal berry compote
  • Biscotti di Semi di Sesamo e Miele - Sesame and Honey Biscuits
