Mattia Barbieri

Executive Chef, Caldesi in Marylebone

Mattia is from Brescia, in Northern Italy.

He grew up surrounded by hospitality; it was “a family affair”. His grandfather ran a well-known restaurant in the city centre while his grandmother owned 4 cafés inside the main historical theatre located in the city centre. And to complete the full culinary background, his father works for a winery that produces. Growing up in this inspiring environment led Mattia to discover his passion, interwoven with his DNA.

After graduating at culinary school, he realised that to be complete as chef he had to master all of the culinary arts so went to work in a patisserie and then in a delicatessen/butchery. Driven by his curiosity for food, he decided to explore further than the Italian borders by moving to the most multicultural city of all, London, with his childhood sweetheart, now his wife.

He began his London career at 5* luxury hotel The Wellesley, where he started as Pastry and Breakfast Chef before becoming the Head Chef. Furthermore, he worked for other restaurants: Vivo in Angel followed by Chucs.

Mattia joined Caldesi in Marylebone in 2019 as Head Chef and has stayed ever since becoming the Executive Head Chef. He says his first impression when he came to eat there was that he had found “a proper Italian restaurant!”. He talks about the restaurant as a corner of Italy and takes delight in sourcing great Italian products such as the creamiest burrata from Puglia and his favourite Coppa ham from Emilia-Romagna, and he only uses Caldesi extra-virgin olive oil in the kitchen.

Last but not least he is proud to has built strong human connections with his brigade, a loyal team who have worked alongside him for years and share his commitment to excellence.

Favourite dish
It’s very hard to me to choose between my “children” but if I must, it would be ravioli because it is rooted to my childhood memories when I used to make homemade pasta with my family. I used all my creativity and experience that keep developing new flavours such as Mortadella and pistachio ravioli with butter and sage sauce and braised leek and balsamic reduction.

Favourite place in Italy
A place where everything is balanced: Tuscany, in the heart of Italy where mountains meet sea and countryside in a perfect mix enriched by unique history and art.

Giorgio Caldesi

Managing Director at Caldesi in Marylebone

On Giorgio’s first day of life, his father, Giancarlo held him in his outstretched arms and introduced him to the customers. For his first two years he lived above Caldesi restaurant in Marylebone Lane. Twenty years later he now lives above our current restaurant, Caldesi, in Marylebone Lane.

From being amused by the chefs as a baby, while mum, Katie was busy in the office to lending a hand to making gnocchi when he was just a few years old, Giorgio grew up in a restaurant. By the age of 11 he was helping front of house and remembers carrying ice cream to customers.

In his year out, Giorgio worked in Japan at a school in Sendai and now speaks fluent Japanese.

After gaining a first in Business Management at university, Giorgio returned to Caldesi and is now enjoying the challenges of running a restaurant.

Giancarlo, Katie and Flavio Caldesi would be my guests at home.

Roberto Arienzo

My journey with the Caldesi family began in 2019, when I first met Giancarlo & Katie Caldesi and the team.

Since then, I’ve been proud to be part of the Caldesi family, initially starting as Restaurant General Manager, where I had the pleasure of meeting many of our regular guests—relationships that continue to this day.

Over the years, I’ve developed a deep appreciation for Italian cuisine and tradition, embracing Giancarlo Caldesi’s Low Carb philosophy, which offers a fresh perspective on classic dishes. Today, as Group Sales and Communication Manager, I combine my hospitality experience with a passion for creating memorable experiences, ensuring every guest enjoys both the food and the story behind it.

Giancarlo Caldesi

The Proprietor

Giancarlo learnt to cook from his parents and his aunt Orlandina in Tuscany.

He grew up on a smallholding with his family where 90% of what they ate came from the land. He began working at a young age on the farm and by 13 years worked a summer in a coffee shop.

After completing catering school, the young Giancarlo became a paratrooper as part of his national service. After two years he moved to Rome to train as a waiter at the Rome Hilton Cavalieri and was later transferred to London to the Park Lane Hilton. It wasn’t long before the hard work paid off and Giancarlo bought his first restaurant in 1986, the Edelweiss in Beckton, opened by Princess Diana. In fact, the tiramisu we serve today is the recipe Giancarlo developed (with a special ingredient from Tuscany) for the lady herself.

Giancarlo went on to open further restaurants in the City of London and the West End. It was in the city that Giancarlo employed Katie to paint a mural. Together they authored ‘The Italian Mamas Kitchen’ recording his mother’s recipes. Another 18 cookbooks followed with subjects ranging from Preserving, Salad, Amalfi, Rome, Tuscany, Venice and Sicily.

The couple came to national attention when they featured in the BBC2 series Return to Tuscany in 2006. The series, which was broadcast world-wide, followed the jovial ‘larger than life’ chef as he and his then fiancée Katie set up and launched a residential cookery school in Tuscany. The show climaxed with them getting married in a dreamlike Tuscan wedding. Link to see show.

Since the series Giancarlo has been a frequent visitor to our screens appearing as a guest on a vast array of foodie programmes such as BBC’s Masterchef ,Saturday Kitchen and C4’s Sunday Brunch. Giancarlo has also been a regular ‘expert’ guest on the television couch where his expertise as a restaurateur and chef has been called on to talk about a range of topics.

His live work has included a number of UK and International food festivals such as Masterchef Live, Foodies Festivals , Good Food and Wine Shows and Taste Italia where he entertains audiences with his lively yet informative cookery demonstrations.

As a businessman he is the owner of the Caldesi restaurants in London’s Marylebone and culinary mecca Bray in Berkshire. With over 45 years experience in the restaurant business Giancarlo can often be found cooking at the restaurants and entertaining diners with his stories behind the dishes he creates.

In 2010 Giancarlo was awarded the ‘Ordine Della Stelle Della Solidarieta Italiana’ (The Order of Italian Solidarity) by the Italian government as recognition of his work as an Italian chef abroad.

In 2011 he was diagnosed diabetes type 2 and in 2013 with gluten-intolerance. This was a double whammy for an Italian chef but with enormous self-control it led to a massive change in lifestyle and diet which put his diabetes in remission. He lost 4 stone and became fitter than he was a decade previously. This achievement led to further cookbooks on reversing type 2 diabetes.

In the same year Giancarlo was awarded a higher medal – “The Order of the Star of Italy” by the Italian Government recognising his lifelong dedication to promoting Italian food and wine abroad. He is deeply honoured – and very proud.

Renowned cookbook author, chef, recipe creator and teacher, Katie Caldesi developed a passion for cooking as a child.

Originally trained as a theatre designer, her career shifted in the mid-nineties when restaurateur Giancarlo Caldesi commissioned Katie to paint a large-scale fresco. Their meeting sparked a professional and life partnership that continues to this day. The Caldesis’ eponymous Marylebone Italian restaurant Caldesi in Marylebone opened its doors in 2002, they launched a cookery school, La Cucina Caldesi, two years later, followed by Caldesi in Campagna in Bray in 2007. In 2006 Return to Tuscany was aired, a BBC2 documentary about the couple opening a cookery school in London and Tuscany and getting married, you can see it here.

Since the series Katie has frequently been in the press for culinary and travel advice, been a guest-chef at countless food festivals and appeared on Saturday Kitchen and Sunday Brunch. She regularly gives talks on food for health and food history.

Katie has written 19 cookbooks and recently completed an MA in food anthropology. Flavio was always cooking at home as a child with his parents and his first piece of writing was a recipe for a banana smoothie! As a teenager, he began working in the kitchen at Caldesi in Campagna under the supervision of his godfather and Head Chef Gregorio Piazza. After A-Levels he followed a year’s apprenticeship course at Westminster Catering School and The Ritz, London.

From London, Flavio moved to Paris to study at Patisserie School Ferrandi. Part of his course led him to work at La Dame de Pic, a one-Michelin starred restaurant. He then moved back to London and worked between the two Caldesi restaurants. He is currently cheffing in Pierluigi restaurant in Rome. We hope he will rejoin the family business in the future.

She finds pasta making fun to teach as well as real Italian bread with crust and crumb and flavour; and adores nothing better than teaching her students how to make an array of national and regional breads from ciabatta and focaccia to volcanic stromboli.

Gregorio Piazza

Head Chef, Caldesi in Campagna

Gregorio Piazza started working for Caldesi as a waiter at 19 years of age. Straight from Ragusa in Sicily this was his first time in London. “His waiting skills left rather a lot to be desired, in fact, he was a terrible waiter!” says Giancarlo. “And so despite liking him, he had to go!”

Gregorio travelled to China and throughout Italy for a year and returned to London to study Westminster College for Culinary Arts. He wrote a letter to Giancarlo asking to come back to the restaurant but this time in the kitchen. After each day at college, he worked as a washer-up in the evenings.

After completing the course, Gregorio moved into cooking and worked in the starter section. Within a year he moved to the position of sous-chef and then Head Chef. His meteoric rise was expedited by spells in Tuscany working at well-known restaurants. Giancarlo said “he was naturally gifted, his sense of flavour and balance make him a stand-out chef”.

Gregorio worked at Head Chef at Caldesi Tuscan Restaurant in Marylebone for 8 years. When the building was demolished, he moved to Caldesi in Campagna in Bray where he has been the “rock” in the kitchen since we opened in 2007.

Gregorio is delighted that we won Best Restaurant in the UK on the Muddy Stiletto Awards 2025, an honour that resulted from customer’s votes. Giancarlo and Gregorio have cooked together for 30 years and as Gregorio says “it is like one person cooking”. Their style is firmly rooted in rural Italian cookery. They have a bond and their cooking is exactly the same, even Katie can’t tell which one cooked a dish.
