More than 20 years ago, Giancarlo and Katie taught friends and guests how to make fresh pasta in their restaurant on a Sunday. It proved so popular they established La Cucina Caldesi, a purpose-built cookery school open 7 days a week and have since been running their 2 restaurants, the cookery schools and have written over 15 cookbooks.
We now run regional Italian cookery courses ranging from fresh pasta making through to mastering the art of creating the perfect risotto, from cooking with fish and shellfish to making the most of the Italian vegetable garden and beyond. We also offer a range of courses focussing on low-carb and gluten free eating and from time to time run courses exploring other international cuisines.
